We try to harvest with the third-third-third rule in mind. We try to get a third of our overall harvest when it&#039;s green. I see your goal is to harvest green olives (you do that for the flavour?), there are now many evidences that the best period to harvest is not again known, weself are experienced a study in collaboration with grants of agricultural ministry and agrarian faculty of Pisa university in Italy to discover that period.

Anyway you spoke of olives hit from frost and rain is another important issue that I will discuss later with you.
